Togarashi’s history dates back at least 400 years, to Edo—modern-day Tokyo—where herb dealers first concocted this multifaceted, layered spice blend. Togarashi is so indispensable in Japanese cuisine that many people keep a vial of it in their pocket or purse, and it's a staple at ramen shops across the country.
