With a variety of chillies in addition to cocoa, coffee, and cubeb berries, Chipotle Cacao has great heat and depth of flavour reminiscent of a Mexican mole sauce. This unique variety of bitters is finished with agave nectar and sea salt, which rounds out an already exceptional and uncommon offering. Six cultivars of chilli are used—Chipotle Morita, Aji Panca, Pasilla Negra, Cascabel, Urfa Biber and Aleppo—alongside cacao nibs, coffee, cubeb berries, dandelion root, and quassia.

Enjoy in a Margarita, Oaxacan Old Fashioned, or use in marinades for added complexity.

Bittercube's homebase is a bustling 9,000 square foot building in Milwaukee, Wisconsin, where they produce bitters and run a storefront for bitters, tools, and non-alcoholic cocktail ingredients. Bittercube makes bitters by hand with real ingredients, peeling hundreds of pounds of citrus, weighing dozens of spices, and decorticating vanilla beans—among other time consuming tasks! No pre-made extracts or flavourings are used in their slow-crafted products, they source botanicals as close to origin as possible and use high-quality base spirits to create densely flavoured bitters. The maceration process is unique to each style and batches take as long as twenty-five days to complete. Bittercube has grown from creating one gallon jars of bitters in 2009 to now producing batches in large stainless-steel maceration tanks, but the hand-crafting process has stayed the same.
