Why Vermouth?
 
Yes, vermouth! The name "vermouth" is the French pronunciation of the German word Wermut for wormwood that has been used
as an ingredient in the drink over its history.

At Only Bittters, we have a particular affinity for wormwood.  Wormwood is the bitter plant used to flavour bitters, vermouths and other spirits. 

Vermouth is a drink that many of us would associate with our grandparents' generation - until now. These fortified, aromatic wines, made with wine and spirit and infused with herbs, barks, roots and flowers, are bang on trend.

Vermouth's comeback is not surprising. With the rise in popularity of old-world cocktails in recent years, it stands to reason that vermouth would find its resurgence. After all, you can't have a Negroni or Manhattan without it.

Maidenii 

Maidenii is a collaboration between French wine maker Gilles Lapalus the winemaker at Sutton Grange, and Shaun Byrne, master mixologist/alchemist who on most nights can be found tinkering in Melbourne's Gin Palace.

Maidenii is uniquely Australian, using wine from Central Victoria and concocted with over 34 botanicals, 12 of them native, including Wattle Seed, Strawberry Gum, River Mint, Sea Parsley & of course Wormwood.
